Bologna Casserole

Last week we said goodbye to our Nanny, she was 88yrs old and had seen so much over her many years.
She always cooked so good, she loved to feed us. She had many meals that she called “Depression Recipes” and this is one.
She called it Bologna Casserole and since it doesn’t look like a typical casserole I asked her once why it was called that… she said ” back in the day, if you were lucky enough to get cheese you could mix it through and bake it in the oven” she never did that, so this is how we eat it.

You’ll need:
Elbow Macaroni ( half cooked, reserve some water)
14.5oz can of diced tomatoes
1 green bell pepper diced small
1 pound bologna from the deli ( un-sliced and diced into bite sized pieces)
Texas Pete Hot Sauce
1 tablespoon veg oil

In a large skillet, heat oil and add bologna.
cook until just staring to brown, then add bell pepper. cook until the start to go soft, about 5-6 minutes.
add tomatoes, juice and all and stir well… add half cooked noodles and fold them in.. add a few tablespoons of the starchy water. cook on me low for about 8-10 minutes
salt an pepper to taste….
Let your family add the Texas Pete after serving.
