Chicken Soup For the Kiddos

Had the kiddo at the emergency room yesterday.. thought she had strep, it wasn’t, Thank God, but she is still under the weather, plus we have rain rolling in…. Good Day for Homemade Soup… Chicken with Orzo Noodles sounds good……

2 Large Bone In Chciken Breasts
1/2 small red AND orange Bell Pepper, diced
2 whole Carrots, Diced
2 stalks Celery, Diced
1/2 Medium Onion, Diced
1 teaspoon Salt
1/2 teaspoon Turmeric
1/4 teaspoon Pepper
2 teaspoons Parsley Flakes
3 cups Chicken Broth
2 cups Orzo noodles
1 can cream of chicken soup

Cover chicken in 2 quarts water and 3 cups broth.. Bring to a boil, then reduce heat to low. Simmer for 40 minutes…

Remove chicken from pot … shred the chicken, be careful its hot… use forks to shred, it is easier….Return bones to broth and simmer on low, covered, for 45 minutes.
Remove bones from broth ..make certain you get the all ..

Add the carrots, celery, and bell pepper to the pot, stir well…. ad your turmeric, salt, pepper and parsley.. Stir well and simmer on med low for ten minutes.

Increase heat and add the Orzo noodles… simmer for 10 minutes and then add the chicken…stir well… add the cream of chicken soup and stir it gently until dissolved through the soup.

turn heat to LOW and let sit for 25-30 minutes before serving…

Taste again for salt and pepper preference…Chicken Soup ORZO
