My Cheesy Meataballs <- bad Italian accent ya’ll
1.5 pds of ground meat ( turkey, pork, hamburger, whatever)
1 cup bread cumbs
1/2 cup half n half
1 tablespoon fresh chopped oregano
1/4 cup fresh chopped flat leaf parsley
1 teaspoon fresh chopped garlic ( about a clove depending on size)
4-5 Mozzarella String Cheese Sticks cut into 1/2 inch cubes ( some of these are for snacking )
Salt and Pepper to taste
its really easy
mix all ingredients, careful not to over-mix…measure the amount of meat you want for your meatball then kinda flatten it, add the cheese cube and roll the ball around it…..
makes about 12-14
pan sear them in olive oil for about 3 minutes per side then add to your sauce and allow then to finish cooking….
here is my trick….i put them in my pasta sauce in the crock pot on low… this allows them to cook through slowly without loosing the cheese in the ball…..about 45 minutes.
serve over sketti or in a hoagie bun, yumo meatball subs!!
