6-7 Boneless Chicken Breasts
3 tablespoons olive oil
2 tablespoons unsalted butter
salt and fresh ground black pepper
1 bunch green onions ( diced)
1 teaspoon fresh minced ginger
2 fresh peaches cut into wedges ( skin on )
4 cups of Honey BBQ sauce
1 cup Peach Preserves
1 1/2 cups chicken broth
in a skillet add the oil and butter on med high heat, salt and pepper the chicken and add to skillet… brown on each side about 7 minutes.
remove chicken and place it in a crock pot on high.
add the onions to the chicken.
in the skillet add the broth and allow to heat through, then add the bbq sauce, preserves and ginger.
once the preserves melt turn off the heat.
add the peaches to the chicken in the crock pot then pour the sauce over it all …cook on high for 1 hour then on low for an additional hour.
Serve over rice or mashed taters….
