1 whole cut up chicken
2 cups homemade buttermilk ( recipe below)
1 tablespoon garlic powder
1 tablespoon cayenne pepper
1 tablespoon onion powder
1 teaspoon salt
1 teaspoon sage
3 cups all purpose flour
Veggie oil for frying
BUTTERMILK: mix 2 cups whole milk, 4 tablespoons distilled vinegar.
add all the spices and mix well, add chicken and cover, put in fridge for at least an hour and up to 12
In a large cast iron skillet, pour in oil with about 2 inch clearance to top ( i have a very deep skillet.. adjust yours so the meat will not make the oil spill over)
heat to 350*
remove chicken from buttermilk, but do not allow too much to drip off, dredge in flour and then back into the buttermilk and then once more in the flour.
cook chicken until golden brown turning every couple minutes( its a food of love thing)
I always start the meat skin side up.. it’s all in what you like. below you will find the cooking times that i use.. remember i always use a small chicken.. not really large pieces.
Thighs: 14 minutes total cook time
Drumsticks: 12 minutes total cook time
Wings: 10 minutes total cook time
Breasts: 14 minutes total cook time
It’s really hard to tell someone how to cook fried chicken in words, its so much easier learned by doing .. but this is how i do it.. enjoy and have fun with it.. make it your own
