Ole! I am a Mexican Food Nut! I love everything from South of the Border! I love the authentic recipes and those that are consider Mexican-American. The hubbyman made Chipotle Pork Ribs on the grill for me today ( Happy Mother’s Day) so, I made this rice to go with it… it was fast and easy!
Ingredients
- 1 1/2 cups cooked instant rice ( such as Minute Rice ™)
- 1 large ripe avocado
- 2 Tbsp fresh lime juice
- 1/4 cup chopped cilantro
- 1/4 tsp ground cumin
- 1/8 tsp lime zest
- 1 small clove garlic, minced
- Salt and freshly ground black pepper, to taste
The Cast of characters ….
Mash avocado and add the Cumin ( a I use 1/4 tsp, but you can add more )
Grate in one garlic clove.
Add your lime juice.
Then add your zest… careful, that white is bitter… yuck.
Mix your Avocado well and chop your fresh cilantro and keep separate.
Cook Rice per package Directions….
allow to cool about ten minutes and fluff with fork.
Add the avocado mix and fold in well with fork, fluffing as you go…salt and pepper to taste…
And you’re done! Serve immediately!
