Grilled Pork Burrito

Do you ever sit up at night and plan the menu for the next day? No? That’s just me?! Oh my goodness. I just love to cook, I love to eat too, that’s obvious… but cooking and feeding others, well that’s my passion. I’m not much of a photographer, but I’m getting there. I’m not much of a food prop fixer upper person ( the title alludes me) but I’m getting there too.. the one thing I know I got the handle on is cooking… so as I sat awake last night and stared into darkness this is what I created…

The Victims:

3-4 cooked grilled pork chops  ( I had three left over from the night before, so that is what I used) I to took them out of the fridge and cubed them small.

1 cup diced Cubanelle Peppers

1/2 cup white onion

1/4 cup olive oil ( seems like a lot, but it’s not)

1/2 teaspoon ground Cumin

1/2 tablespoon fresh chopped cilantro

1/4 tsp salt and pepper

that’s it… no really… that all …

Here’s what you do…

Dice up your pork, peppers, onion and cilantro and add to a bowl.

Add the oil, salt, pepper and Cumin ( I really do love Cumin…sigh)  Mix well and let marinate in fridge for 3 hours.

After it “Marries” add to a non-stick skillet and heat up slowly on medium heat ( it will release the oil and not burn it) sir often and then reduce heat to med-low and cook for about 15 minutes.

It’s ready to serve after this point… I made burritos, obviously.. but I’m betting it’s be good over rice .. hmmmmmm

Serve with your favorite burrito topping… I used Sargento™ Sharp Cheddar, Sour Cream, Fancy Lettuce from Fresh Express™ , homemade Pico and Guacamole.
