I adore chicken salad… It is one of my Summertime favorites. We spend so much time outside, on the beach, doing yard work and they hubbyman is always on that John Deere doing something… so we enjoy a cold supper from time to time in the hot, humid NC Summer… this is great packed for a picnic and pairs well with all of my pasta or veggie salads….
It just looks like summer!
You will need….
2 large bone in chicken breasts with meat removed ( baked at 350* for 1.5 hours.) I season it with a little salt and pepper and add 1 cup of water to the bottom.
1 cup homemade garlic dill pickles ( my recipe is on blog) or any dill pickle you have, diced.
1/4 of a white onion, diced.
1 1/4 cup Dukes™ mayo
Salt and Pepper to taste.
King’s Hawaiian Sweet Rolls™
Pick the chicken and remove all bones, then dice to desired size.
Dice your pickles ( you will need about a cup after they are diced)
I might have diced a few extra, to taste test you see…..
Dice your white onion… don’t cry… geez
Add the onion and pickles to a large bowl ….
Measure out your mayo and add to the mix, ( more or less to taste ) and add your salt and pepper…. mix well and chill at least an hour.
Serve on King’s Hawaiian Sweet Rolls!
