Summer… it’s a love-hate relationship for me. I love the tasty and cool treats, but that humidity! Mercy! This is an amazingly cool delicacy… too easy to be gourmet, but so good it has to be rendered succulent.
Four easy ingredients … plus one for topping!
One pint cold heavy whipping cream
1 heaping tablespoon of sweetened condensed milk
1 tsp. lemon extract
1 large peach, scalded/peeled and diced
In a stand mixer ( or a hand held) whip the cold whipping cream on medium speed and half way through add the extract.
Scald our peach in boiling water for a minute or two and the peel after it has cooled slightly, the chop to desired size.
Stir in on heaping ( or running over) Tablespoon of the milk to your peaches and stir together…
Very gently fold in the whipping cream….
In a freezer safe bowl, freeze the peaches and cream for at least three hours.
After freezing, scoop into individual bowls and top with sweet coconut!
