Oh glorious buttercream, how I love thee. I have never made it at home until today. What what? Yup… first time ever..and now that I have, I do not think I will ever buy the can stuff again. I have used this recipe ( the cupcakes) forever and my friend gave me her recipe for the buttercream. I have made a million different types of frosting, but this is by far my favorite. Easy too, that was a bonus!
You’ll need:
For the cake:
One Betty Crocker® Lemon Cake Mix ( made per package directions) set aside.
The zest of two limes
The juice of half a lime
For the Frosting:
1 pound Dixie Crystals® powdered sugar
1 Stick unsalted butter ( softened)
1/2 tsp vanilla extract
1 tsp lemon extract
zest of one lime
2 tablespoons milk
Make the cake per package directions then add the zest and juice and whisk well. Pour into muffin cups and bake at 350* for 15-17 minutes. Remove and allow to cool completely.
Frosting:
In a stand mixer ( using whisk attachment) or with a hand mixer, beat the butter into the sugar for a few seconds, add the rest of the ingredients and mix until fluffy.
Set aside and pipe onto the cup cakes after they have cooled.
So easy, but tastes like it took you all day! Have fun!
