Southern Egg Salad

What do you do when you plan to make deviled eggs and the shells are being a pain in the patootie? You make egg salad of course! Hubbyman was happy, mama was happy, kid was happy… we’re just a happy bunch huh!?

 

You need:

10-12 Hard boiled eggs

2 tablespoons Dill relish

1 1/2 tablespoons Dukes® Mayo

1 tablespoon yellow mustard

salt and pepper to taste

dried dill for garnish

Look at those pitiful eggs, I had no choice but to mash em! Poor lil fellers never saw it coming, it was quick I promise!

So that’s what I did…. mash them with a tater masher a few times until they are the size you want, I like them rather small.

Add your pickles, mayo and mustard.  Stir well, season with salt and pepper to taste. Chill at least one hour. Serve on your favorite bread and garnish with dill !
