Guess what? I don’t cook every night! What-What?! Yup, at least once a week, the hubbyman takes over the kitchen ( and every bowl, why does he use every bowl?) Last night he made his southern fired chicken nuggets, these are man sized nuggets that I have no problem letting him cook!
8-10 Chicken Strips cut in half or thirds, depending on size
2 cups buttermilk
1 tsp. Poultry Seasoning
1 tsp. each salt and pepper
4 cups flour
5-6 cups Peanut Oil heated to 350* in a pan that can handle the heat of deep frying.
Marinate the chicken in buttermilk for 1 hour.
When you are ready to begin cooking, heat the oil to 350*
Season the flour with the poultry seasoning, salt and pepper, stir well. Using tongs, allow the excess milk to drip from the chicken and then roll in around in your flour. DO NOT knock off the excess flour. Place 2-5 pieces in at a time and cook for about 6 minutes, turning often. Transfer to a plate lined with a paper towel and allow to drain.
When you have finished, serve with your favorite dipping sauce. Around here, that’s ranch!
