French Toast Casserole

I am very frugal, wasting food is one of my biggest pet peeves. How many peeves are we allowed? Is there a limit, cause I have several… you can get back to me on that one.

So I had these hoagies that were on sale, and I told everyone…”make your sammichs with these, have fun, like make lil subs,” did it happen? Nah, but do no worry!! Mama’s got this…I was craving french toast, I was craving sausage and I wanted them today.

Pause…….

Roseanne®  was on, and it was the last episode, why did they kill off Dan? I loved Dan  (wipes away tear) ( yes really) … anyway, where was I … OH! I’ve actually never made a french toast casserole, so I looked up a few recipes and kind of combined them into one. It’s rather simple and if I must say so ..rather GOOD! Most of the time I make a bread pudding and this is kinda the same thing, but not.

 

You’ll Need:

  • 10 cups stale bread ( in my case, 6 hoagie rolls)
  • 7 whole Eggs
  • 2 cups Milk
  • 3/4 cup half and half
  • 1/2 cups Sugar
  • 2 Tablespoons Vanilla

For the topping:

  • 1/2 cup AP Flour ( all purpose)
  • 1/2 cup packed light brown sugar
  • 1 teaspoon Cinnamon
  • 1/4 teaspoon Salt
  • 1 stick Cold Unsalted Butter, cut into small pieces

Grease a 9 x 13-inch baking pan with butter. Cut bread  into cubes and place evenly in the pan.

In a medium  bowl mix eggs, milk, cream, sugar, and vanilla. Pour evenly over the bread, take your hand and kinds “mush” it down, gently, not too much. Cover tightly and store in the fridge for several hours.

In a separate bowl, mix flour, brown sugar, cinnamon, and salt. Add butter and cut into the dry mixture until mixture until it looks like little “rocks”

Keep that in fridge too until ready to bake.

Preheat oven to 350 F.

Remove casserole from the fridge and sprinkle crumb mixture over the top.

Bake 1 hour.

Serve with warm syrup.

We had it with sausage and lets just say, “wow”

So the pastry cutter is missing… there is a reward. I had to improvise. So, yeah I used my veggie scoop.. it worked, but took a bit longer.
