Olive and Feta Medley

I have a confession, I am addicted to olives. All olives. I do not think I have met an olive that I haven’t loved. This Olive and Feta Medley is so good and you CAN buy it already made; however the price for 3 ounces runs about $4.00 and you get mostly oil. I can’t live with that. On a creative notion I put this together and WOW it is perfect. A lot less oil and the flavor is amazing. FYI, try it over Arugula.. oh yes, that’s the lunch of dreams ( for me)

It’s so easy….

1/2 cup feta

3/4 cup kalamata olives ( look for sales)

3/4 cup green olives ( any kind, I used pimento stuffed to save money. I’ll tell you about that in a minute)

3/4 cup black ( ripe) olives ( low sodium if on sale)

1/4 cup EVOO

2 tsp. Badia® complete seasoning

Drain and rinse olives ( you will have left overs from the jars, I normally just place them in an air tight container for another recipe later in the week)

In a large bowl add the olives and feta then drizzle with the oil and season with the Badia®

Fold together gently and cover for about 20 minute. DONE!

Store left overs in fridge. NOTE: when using your leftovers, leave on counter for 20 minutes prior to serving.

BUDGET!

Store bought: Price as of yesterday, local for me: $4.99 for 3 ounces and it was nearly all oil. ( sad face)

Feta on Sale: 2 four ounce containers for $4 ( I used about 3/4 of one and the rest will be used at another time) so that’s about 3 meals, maybe 4.

Kalamata Olives on Sale: $2.49 ( I used half a jar) the rest will be used in another recipe next week..so that’s 2 meals.

Green Pimento stuffed olives: $1.49 ( I used about half) the rest again, saved for later.

Black Olives: On Sale with Savings Card $1.79 ( wow that’s actually good) I used half, yes saved rest for later…. I’m a broken record, I know I know…

I always have the olive oil on hand and the Badia® , if you don’t keep the seasoning on hand it will run you about $2 for a small container and will last you through many many many recipes.

Sooooo.. rounding up ( I loathe math) it was about $3.70 for the medley. HOWEVER, I got about three times more than they offer at the store.. and I will get 4-5 “eatin’s” from it… Granny always said “eatin’s” sooo I guess I do too….
