Shredded Mexican Chicken

We love Mexican Food!

It really doesn’t matter if it is Beef, Chicken, Pork or Beans… we adore any Mexican food we can get. I have come to be a very well rounded Mexican Home Chef… this easy Crockpot® recipe will save you so much time and it is good anytime of the year… Hope you try it and please let me know what you think …

You’ll need: 

1 1/2 pds boneless chicken

1/4 cup taco seasoning

1 can diced tomatoes

1/2 an onion thinly sliced

1 green bell pepper diced

1/2 a jalapeno diced

1/8 cup fresh cilantro ( no need to chop)

1/2 cup taco sauce

Easy instructions:

add the chicken and all of the ingredients to a crockpot, cook on high for 3 hours and on low for 1 hour.  Remove chicken and shred it, then return to the pot. Keep on warm until ready to serve.

salt and pepper to taste

Good in tacos, burritos, and over rice!
