Do you remember chasing the ice cream truck in the Summer? I sure do, and my favorite treat was an Orange Creamsicle… these days I am a bit more grown up and I don’t chase ice cream trucks… well not as far anyway. I have turned my childhood favorite into the best summer pie you will have this year.. it’s refreshing and a bit naughty.. if you’re looking for low calorie, low fat and low carb.. well this ain’t your pie!
You’ll need…8 oz. cream cheese
1 cup fresh squeezed OJ
12 oz room temp cream cheese ( 1 1/2 packs)
1 teaspoon Orange zest
3/4 cup drained mandarin oranges plus 5-6 for garnish
4 oz. Jello ® vanilla instant pudding (dry)
4 oz. Jell-O ® Orange Jello (dry)
12 oz. Cool Whip ®
1 (10″) Kebbler Graham Cracker Pie Crust
Beat cream cheese on high till smooth. Add orange juice, zest, vanilla pudding and orange Jello …beat till blended…then add the oranges and mix for 30-45 seconds. Stir in 1/2 of the Cool Whip.Pour in pie shell. Top with remaining Cool Whip. Chill several hours or overnight.
