Chocolate Cranberry Christmas Cookies

I can’t decide which I love more; Christmas or Cookies? It’s a constant tug-o-war in my life. No, really…it is.

I don’t bake very much in the warmer months, I am actually not much of a baker at all , but I can throw down a mean cookie! Cookies from a roll are fine, I actually have a kicked up version with rolled dough up next … but there is something about a from scratch  cookie that can warm even the Grinch’s heart.

We adore this combination of cranberries and chocolate. It just screams Holiday!! Well, figuratively not literally..cause cookies don’t talk… sure you knew that…

Try this out…. you won’t be sorry…. pinky promise!

You Will Need:

  • 2 sticks of butter ( softened )
  • 1/2 cup plain white sugar
  • 1-1/2 cup  light brown sugar( packed )
  • 2 large eggs
  • 1 tablespoon pure vanilla extract
  • 1-1/2 cups AP flour
  • 1/2 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • about 2 cups of Christmas M&Ms®
  • 1 whole bag of dried cranberries ( for baking )

PS, While typing this, I burnt the first batch…. why did I tell you that? Cause I already told you … I am not much of a baker….. BUT, I will be back… I probably should go stare nito the oven ………..

Ok… back…. second batch did not burn!! YAY ME!!!!

Preheat oven to 375

Cream butter with sugars until fluffy and tan ( a stand mixer with the paddle is best) Add  your eggs one at a time, beating good after each one. Add vanilla and beat again.

Combine flour, baking soda, baking powder, your salt …Add to bowl and mix until wel combined. Add to the mixer and mix on low until well combined.

Add your cranberries and chocolate and mix on low until well incorporated.

Measure out your cookies in any amount you want, and bake on a parchment lines cookies sheet for about 8-9 minutes. Size of cookie and ovens vary, they spread out a bit so give them space ..

As soon as they come out of the oven I almost always add a few more M&Ms® to the top of the cookie while it is still warm, it gives the cookie a brighter Christmas color., and it will stick while the cookie is still a bit ooey gooey …
