I love egg salad, I probably do not make it as often as I should… cause it is a huge success every time. I did a bit of meal prep on Sunday and some on Monday for the week, and I decided it had been far too long since we had this yummy delight. The hubbyman is a huge fan and it makes for a very different find in his lunch box. He was happy, I was happy…. we just all kinds of happy around here y’all.
- 10 eggs, hard boiled, peeled and diced
- 1/2 med white onion diced small
- 1 tsp celery seed
- 3 Tbsp French’s® yellow mustard
- 1/3 cup mayonnaise
- 1/4 cup dill pickle relish
- 1/4 teaspoon paprika
- Salt and black pepper to taste
Its easy really…. chop the eggs, yolk and all then add all of the ingredients and fold until well blended. You can add more mayo if you like it a bit looser. Then chill and serve. Easiest recipe ever!!
