Nanny’s Potato Salad

My nanny made the best potato salad.. she loved it and she made it the way she liked it. She never conformed to any recipe. It has taken me a few years to get it just right, since she never wrote it down, but I think I hit the nail on the head with this one. She would love it.

Ingredients

5-6 pounds of potatoes, diced about in 1/2 inch cubes

1/2 tablespoon salt

1 tsp black pepper

1 tsp celery seed

1/2 cup dill pickles diced small  or dill pickled relish

1 med onion diced small

1 3/4  cups mayo

1/4 cup mustard

paprika for sprinkling

dried parsley flakes for sprinkling

5-6 green olives sliced for garnish

In a large pot, add potatoes and fill with cold water to cover the top of the potatoes.

On medium-high heat, cook the potatoes just until fork tender.

Drain potatoes and rinses gently a few times with cold water. Spread them on a large cookie sheet and allow to cool just a bit…

While they are cooling..

Using a large mixing bowl, mix the diced dill pickles, and diced onion stir well then add the mayonnaise, mustard, salt, pepper and celery seed…mix well. Fold in the potatoes and coat well. Taste to see if you need more salt or pepper.

Transfer to a serving bowl, them sprinkle with paprika and garnish with olives and parsley flakes. Chill at least 2 hours before serving.

Stir well just before serving.
