Southern Style Creamy Cucumbers

Creamy cucumbers are one that hubbyman’s favorite Summertime sides, or main course, just depends on the day. They are so easy to make and taste like they are so complex. Its the dill, it just adds that little bit of depth that makes you think you spent all day on them. Well, they are 15 minutes from start to finish . They are better of you let them chill a few hours, but you can and I certainly have, eaten them right away.

If you have never had them, I highly recommend you try’em.

Ingredients:

2 english cucumbers, cut lengthwise and seeded, then cut into half moons

1/2 white onion, sliced

8 oz container of sour cream

1 tablespoon sugar

4 tablespoons malt vinegar ( any vinegar will work, I love malt)

1 tsp pepper

1 1/2 tsp salt ( or to taste)

4 tablespoons fresh chopped dill

more dill for garnish (optional )

Cut the cucumbers and onions and place in a bowl. Chop the sill and mix in a separate bowl with the rest of the ingredients until well combined then fold in with your veggies and chill for at least 2 hours. Garnish with bigger pieces of dill and serve.

    Yummy! This is a familiar recipe to “mizeria” in Polish. My kids could eat this everyday if they could, haha! We have a lot of recipes in common. I’m excited to share them with you. Happy cooking!
