Well, my favorite two fruits are strawberries and lemons, so this pie was a no brainer. It had to be done, there was no way around it. The flavor combination is outstanding and superb for Summertime gatherings, or, eating alone, in your pantry, in the dark. No judgement here.
Now, if you are looking for keto, you clicked the wrong pie, yes its cream cheese, but that is where the ” good for you ” stops. It’s good for the soul but not so much the hips! Hey, just keeping it real. It is the pie you make for special occasions, to enjoy with your loved ones, or, alone in your pantry , in the dark. Either way, it’s going to become a favorite for Summers to come…

The Filling
- 2 blocks cream cheese at room temp
- 1/2 tsp vanilla
- 1/4 cup heavy cream
- 1/2 cup powdered sugar
- 5 to 8 strawberries diced in bite sized pieces
- the zest of 1 1/2 lemons plus the juice of 1
1 ready made pie crust
The Topping
- 1 pint cold heavy cream
- 1 tsp vanilla
- 3 tablespoons powdered sugar
In the bowl of your stand mixer, add the first four ingredients and beat on med until blended well .
cut the berries and add the zest and juice to them and mix well.
Add the berries and lemon to the mixture, one 1/4 cup at a time, blending on low untl combined, after each 1/4 cup is combined pour into the pie shell and chill at least 4 hours. Over night is best.
In your mixer with the whisk attachment, add the cream and vanilla… beat on med speed for 3 minutes. Add the sugar and beat on med high for 2 minutes… don’t whip too much or you will make butter.
Top the pie with the cream and chill at least another hour.
Serve
