Tuscan Sausage and Bean Soup

It’s 2020, time for a new decade and a new me!! The blog will be getting a face lift and the YouTube channel is growing!! I can not wait to show you all of the new recipes I have been working on and take them off the paper and onto your screens!!

It’s national soup month and I wanted to start this new year with this Tuscan Sausage and Bean Soup!! It’s a favorite here and it’s been too long since I last made it!!

Creamy broth paired with sausage and tender white beans boost your mood and keep you calm and warm during these Winter months.

Ingredients

  • 1/2 stick butter
  • 2 tablespoons dried minced onion
  • 4 cloves garlic finely chopped
  • 1/4 cup flour
  • 1 1/2 cups milk
  • 2 32oz cartons chicken broth
  • 2 pds ground pork sausage ( with sage) cooked and drained
  • 4 cups dried great northern beans
  • Salt and Pepper
  • dried parsley

In a large pot, add the beans, onion, salt and pepper with the broth and cook on med heat, stirring often, for 2 hours. Keep an eye on your broth level and add more if needed.

In a skillet, cook the sausage and remove half the fat.

Add the garlic and flour and stir well until combined. Add the milk and continue to stir until it is creamy.

Add the sausage mixture to the beans and stir well. Add parsley, as much or as little as you like and turn heat to med low. Add the butter and allow it to melt.

Cover and cook for one more hour, Stirring often.

Serve alone or with crusty buttered bread.
