Cathead Biscuits & Strawberry Jam

Just Like Granny Made !!

I had a craving for Granny’s cooking!! I miss her so much. I made so many of her recipes last week and I made this one today!! Just that memory of Sunday morning jam and biscuits, well just that was enough to make me tear up. Did I mention how much I miss her? Her meals were not just rib stick’n but overflowing with memory !

Cathead Biscuits

2 Cups Self Rising Flour

1 cup buttermilk

2 tablespoons soft butter or lard

pinch salt

That’s IT!! Just mix and cut, no need to roll em out, just flatten on a floured surface and cut to the size you like. Bake on 400 for 15 to 20 minutes. Video Below.

Small Batch Strawberry Jam

1 pd strawberries, washed and cut

2 cups sugar

1 tablespoon lemon juice

Add all ingredients to a sauce pan on med heat, stir continuously until sugar is dissolved and berries are releasing juices. Remove from heat for 15 minutes and smash slightly with a potato masher. Add back to heat and simmer gently for another 15 minutes. Allow to cool, add to a glass container and store in fridge for up to a week.

We like to serve ours with patty sausage, love that combo of sweet meets savory!! So very good !!
