Navy Bean and Ham Soup

You can’t find an easier soup for your crock pot…well maybe you can, but not from my kitchen.

Navy Bean Soup is one of my many, many, way too many favorite soups and one reason I love it is because I can put it together in the morning, head out to work and come home to supper… hot shower, fresh Pjs and a bow of comfort… does it get any better?

You need:

One pound dry Navy Beans

1-2 cups diced ham ( left over ham is best, not sure why)

1 med white onion diced

1 14oz can diced tomatoes and their juice

1 cup chicken broth

7 cups of water

salt and pepper to taste

All you gotta do is….

In a large crock pot, add the beans ( I do not soak my beans, I know there is some debate about this, but I just choose to cook from dry) add the onion, tomatoes, ham and all of the liquids. Add a bit of salt and pepper.

Cook on low for 8 hours or high for 4 hours. Salt and Pepper to taste.

I cook these all day and they are perfect! I serve with cornbread and honey!
