Ramen Noodle Soup with Mushrooms

Oh, to be young again. I loved Ramen Noodles growing up.. okay I still do, but I don’t eat them much anymore.. My nanny used to make these for us and this is her “grown up” version… so good y’all … enjoy.

One or Two Packs Oriental Flavored Top Ramen™ ( pic shoes two, cause I shared with the kiddo) NOTE: I only use ONE pack of the seasoning.

2 Cups low sodium chicken broth ( 4 if using two packs)

5 large button mushrooms sliced

2-3 tablespoons low sodium soy sauce

1 teaspoon rice wine vinegar

3-4 green onion tops sliced ( for garnish and yumminess)

Chow Mein Noodles ( oprional)

Put your broth in a small pot. Add one pack of seasoning and the mushrooms. Allow to come up to a big simmer and add the noodles. Cook til noodles are done to your liking.

Serve in a bowl and then add the vinegar and green onions.

Done! Easy Peasy !
